My wife and I are going to be traveling to South Africa for a safari, and we need to purchase a new camera. Neither of us intend to become photography experts. We’d like something practical and affordable(approx 500-750USD), yet one that will help us capture the majority of the wildlife at a good quality. Any suggestions? If there is something of that variety in a smaller size, then it would be preferred. Thanks a lot.

Get one of the Canon SX-series, or Panasonic FZ-series, and bag, and a bunch of memory cards. Both these model series offer decent resolution, image stabilisation, long zooms and a degree of manual control.
